    At 86 years old, Giorgos Hatziparaskos is one of the last bakers in Greece making phyllo pastry by hand. With the help of his wife and son, he keeps the business going thanks to tourists visiting the Greek island of Crete. Giorgos Hatziparaskos Handmade Phyllo Workshop is located in the heart of old town in Rethymno.

Ive been to Greece many times and I have to say, their elderly are some of the most hard working and endurable people Ive ever met. The villa I was in was run by a 70+ year old lady who did almost all of the work maintaining it by herself! I love Greece!

Having tried both handmade and store-bought phyllo I can say that my grandma's phyllo is WAY better. Homemade phyllo is absolutely amazing and even if it costs more it's totally worth it.

My Serbian grandmother made phyllo by hand on her dining room table. I remember watching her stretch the dough by hand when I was about 5 years old. It wasn't until years later that I found out what she was doing, how hard it was, and that none of her 10 sisters could do that. She was making pita zeljanica (Serbian Spinach Pie), we just called it pita. She passed away when I was 11 years old and was never able to pass down the secret.

@Lumosnight dude if you want a cheaper alternative just buy the factory made stuff, it’s probably not as good but it’s cheaper. Good if you still want the phyllo pastry but can’t afford the fresh stuff like the man in the video makes. The guy puts loads of time into this pastry, time = money because time is valuable, therefore it could be sold at a higher price since he put loads of time into it. Honestly it just kind of sounds like you hate the comment just because the guy is saying the man should sell the pastry he poured blood sweat and tears into for more. Which he reasonably could because again, time is valuable, and he put loads of time into that pastry.

@BUT MOTHA would you trust factory made cars? House appliances? Pharmaceuticals? We adore this truly beautiful method of making dough or pasta. But machine can make SAME product with a fraction of effort and cost. Therefore for everyday food we will choose "factory made"

Came here as I'm a baker myself that makes everything mostly by hand and I know that it is such hard work. Watching an elderly couple doing this really makes me want to jump in and help them. They're truly a hero for keeping tradition alive and thank you Insider for making this touching video

My mother always makes her own phyllo whenever she bakes anything that includes it. Saragli, Spanakopita, you name it. She rarely buys the mass-produced one, and that happens only if she has no time. She learned it from my grandma and taught me as well how to make it, although the way you "open" it is kinda difficult.

@bladerj first of all there is no rust and before you try to talk to me about it I saw the God damn place up close like a year ago also the thing about linen and fumes from cars for drying it outside is stupid from you because the city here is 30000 population with not a huge amount of cars also the closest car inside the old Town he has his workshop in is like 1 km away if you don't know don't talk dude

Been there in 2012, it seems like time has stood still these lovely people still look just the same as back then. Can confirm they make the best Baklava or filo pastry i've ever eaten. The bakery is on the isle of Crete though wich is a Greek island, from what i understand after being there this is a subtle difference Crete people would like you to know.

Lmao pretty sure most machine made pastry items are every bit as good as that old guy's handmade stuff. Just do a blind taste test, I'm sure you you can't taste the "love" that went into it.

@Kay Not everything. However food is mostly better when hand made as you touch and feel and taste the quality, machine ones, you care more about speed/volume/margins. But not everything machine made is worse, sometimes it can be better if used correctly by the right people. Otherwise it is insult to great chefs who use machines in their kitchens to better control temp/measurements etc... Obviously if main concern is volume and margins then quality will often be bad...
